I did not frost it, but baked it in a bundt pan and sprinkled it with icing sugar. It was ok, but the next day it was worse. Yummy cake! Zucchini Cake II Recipe -

I frosted it with a cream cheese frosting. I also added to the recipe, coconut and chocolate chips which I knew would add a lot more calories, This is moist and delicious. I packed the zucchini into the measuring cup and measured on the plus side of almost 3 cups. Be sure you do NOT drain the liq Beat sugar, butter, oil, and vanilla with an electric mixer on high speed until fluffy, about 2 minutes. Add eggs; beat until incorporated, about 15 seconds.

Stir together flour, cocoa powder, baking powder, baking soda, and salt in a bowl. Add flour mixture to butter mixture alternately with sour cream, beginning and ending with flour mixture, beating well on low speed after each addition. Stir in zucchini and chocolate chips.

Pour into prepared pan; smooth top with a spatula. Bake in preheated oven until a wooden pick inserted in center comes out clean, 45 to 50 minutes. Remove from oven; cool completely in pan, about 1 hour. Prepare the frosting: Melt butter in a small saucepan over medium-high. Cook, stirring occasionally, until butter begins to brown, about 10 minutes. Remove from heat; pour into a heatproof glass bowl. Can I use whole wheat flour in this? Would the amounts be the same?

I tend to find baked goods made with whole wheat flour to be dense. Spelt flour is a whole grain flour that is lighter. But you can always experiment, especially if you like baked goods made with whole wheat flour. Hi Katie! I want try it as soon as possible! Cream Cheese Frosting

I made the cake and frosting yesterday afternoon. It made my whole house smell amazing. The taste of this cake and frosting were out of this world. I used silicone muffins liners that I baked at for about min. I got 15 medium size muffins. These freeze really well. I will be making these again. Thanks for the amazing recipe!

I tried to make this recipe with a few changes, and the result was really good; just in case you want to try a new variation: I subbed yogurt for the applesauce same amount, g and I used all the oil 70g. It turned out amazing!!

Really, really yummy! Thank you for all your work! I made this and although I liked it, others did not. It turned out more bread like consistency, rather than cake texture.

As it was in the refrigerator, it seemed to get more doughy texture, possibly from condensation in the container. The frosting was great! But for some it may take some getting used to, like my husband, but so much better for you! Thank you for all the recipes! I would reccomend using white vinegar and not apple cider.

Lemon Zucchini Cake

I personaly did not like the taste it gave. Totally delicious! My 3 kids ate almost the whole pan for breakfast… except for the small piece my husband and I each managed to grab! I used Namaste GF flour. Thanks for a fab recipe! I love Zuchinni cake.
